FSIS recommends four simple steps: Clean, Separate, Cook, and Chill.
- Clean: Wash hands and surfaces thoroughly.
- Separate: Keep raw beef away from ready-to-eat foods.
- Cook: Use a thermometer
- 145°F for steaks/roasts (with a 3-minute rest)
- 160°F for ground beef
- Chill: Refrigerate promptly. Don’t leave beef out for more than 2 hours.
