FSIS recommends four simple steps: Clean, Separate, Cook, and Chill.

  • Clean: Wash hands and surfaces thoroughly.
  • Separate: Keep raw beef away from ready-to-eat foods.
  • Cook: Use a thermometer
    • 145°F for steaks/roasts (with a 3-minute rest)
    • 160°F for ground beef
  • Chill: Refrigerate promptly. Don’t leave beef out for more than 2 hours.
