Because this cut rewards patience and gentle heat, it is ideal for braising and slow-cooking. Here are several cooking methods:

• Crockpot: Cook on low for 4–8 hours with broth and aromatics until falling apart.

• Oven: Braise at 300°F for 2.5–3 hours in a liquid like white wine or beef broth.

• Smoker: Season and smoke at 250°F for 3 hours, then wrap in foil with broth for another 1–2 hours until tender.

Ingredients: Osso buco (cross-cut shank), garlic, onion, carrots, celery, crushed tomatoes, broth, thyme

Steps: Add all to slow cooker. Optional: Sear meat first for more flavor. Cook until falling apart.
